About Luigi

I've been working as a Pastry Chef for 12 years, I don't really believe in titles and years of experience, it all depends on how much love you put into what you do and how much curiosity you have, this makes the difference. I worked in Italy for many years where I also finished an academic course in professional pastry art and many courses of specialisation then I had some experiences abroad. Now I have been living here in London for 4 years. I believe that now is the right time to share what I know and also share my love for this job.

About the lesson

My pastry teaching is rooted in creativity, exploration, and the freedom to make mistakes. Here, there’s no “wrong” outcome—just opportunities to learn and improve. Each bake is a chance to experiment. We focus on understanding techniques deeply enough to bend or even break the rules, creating something truly unique. Laughter is as essential as flour and sugar, and in every session, we learn together. Let’s turn curiosity and play into something delicious. I've a very creative, strategic and easygoing approach, I love seeing people laughing while they're learning. What can we learn together?!? I like to write "together" because every time I learn something from you. *Not everything can be done, depends on what equipment and location we are. Here is what we can do: -Pâte à choux - Brioches -Pastry cream and derivatives -Meringue -Sponges -Shortcrust And Biscuits - Sicilian Rosticceria, Pizza and savoury stuff for special events. - Build up and decorate Cakes. -Macaron.
