About Ernesto

I have been a master trainer instructor for 20 years. I started at the Guadalajara Chamber of Commerce and they called me to the Restaurant Chamber. Canirac. From there they invited me to Conalep Zapopan and I earned an invitation to the university for my good teaching......I have about 130 people who have transcended with my teachings and some already have businesses......I have the pride of having first places in nestle.melia hotels.fiestaamericana México.vallarta.guadalajara.zacatecas.Monterrey contests. Phoenix arizona.and henford California. I currently give private classes and at the university and events and banquets.....

About the lesson

I have 30 years of experience. I started at Hotel Camino Real Guadalajara in 1968 in the breakfast area and they immediately moved me to meals. And after 2 years they put me in dinners and events and banquets. I learned salseo.platado.grill with hereford cuts.angus.brangus.salmon. shrimp. Tuna.stuffed breasts.lobsters.prawns.pasta sauce Alfredo.pomodoro.bechamel. demiglaz.española.dressings. salads.Mexican cuisine. International. Japanese Chinese.Italian. desserts.national and international.bakery. cake shop. Jellies. hors d'oeuvres. pâtés. Canapés.terrines.galantines. breakfast service, lunches, dinners, events and banquets... I managed the specialty restaurant in my charge with 7 people in my charge. Managing cold tables, hot tables, salads, appetizers, dressings. Cream soups, stews, both cold and hot....because of my knowledge they took me to Rome.Italy.France.Spain.Seville.I currently teach gastronomy classes at the University of Zapopan Jalisco and I am training graduates in gastronomy...prepared chefs. for hotels.industrial canteens.
