About Viola

In my hands-on classes, students learn to embrace Italian food as an everyday art. I am the Italian resident instructor for 18Reasons and The Civic Kitchen in San Francisco. My teachings draw on the trove of food memories that are such an important part of my family legacy and on 30 years of experience in the field of Italian food and cooking.

I wanted to keep sharing my passion and knowledge for Italian food and food culture, but within a framework that would be more suited to my family life. I started teaching and lecturing on the subject and quickly realized that I both love it and have a knack for it.

*Italy by ingredient series teacher at the Civic Kitchen

*Italian cooking workshops at the Italian Consulate in SF from 2009 to 2015

*Food specialist for the Italian cultural institute in SF

*Chef ambassador for the Italian Trade Commission for various trade fairs and shows in California

About the lesson

I work with the students to tailor content and expectations. We agree on dates and times and get started. I prefer using my kitchen but will travel if asked.

My yearly lasagna primer is one of my very favorite classes to teach. It's an exercise on undertaking a laborious task and breaking it down in manageable steps that give great results. Additionally every step is an element that has a number of uses across an Italian kitchen.
